Shrimp, scallops, Thai basil, mint

My memories served me well from the 1960’s of BBQing hot dogs on the shores of Mission Bay, near Vacation Village and running around the property’s imposing observation tower. It’s now Paradise Point Resort and Spa and the imposing observation tower from 50 years ago years is still in place. 

The modern restaurant, Tidal, is making a name for itself with Executive Chef Amy DiBiase’s inventive menu.  Not too fancy, but food made with a twist leaving the 1960’s behind.  As I gazed out the window looking at Mission Bay, it dawned on me that Mission Bay is often overlooked as a dining destination.  Chef DiBiase and her staff have made dining a memorable experience.
