Sure, it’s Hawaii full of fresh fish but how its prepared makes the difference. Hyatt Maui ‘s Japengo restaurant has Sushi Chef Kaz who made us a sashimi chef’s plate and the pieces of fish were large and peaked with flavor. The sushi bar is a fun place to sit and watch the action as fish is fillet, rolled and plated. The team of chefs are truly skilled with sushi.
On to the Big Island, Monstera Sushi in Mauna Lani, has Tokyo trained Master Chef Norio Yamamoto creating beautiful sushi and sashimi dishes. Topping the meal is the Keaau planation bananas cooked tempura style with locally made ice cream and caramel sauce. Such a treat.
