Tip Top Meats, a well-known Deli and butcher shop in Carlsbad, opened in 1967 with owner John Haedrich making sausages and slicing meats. He’s 87 years old and to this day he adds a pinch of this and a pinch of that in his sausages.
He still cuts meat by hand as a trained master carver and precisely forms the hamburger patties. His grandson Matt, works in the store and his grandfather is his hero.
