I had the chance to speak with Berthillion’s grandson, Liomel, and he said the ice cream is extraordinary because of the products they use. Fresh cream from Normandy made specifically for them, rich cocoa from the Ivory Coast and Madagascar vanilla. The pear ice cream was light and tasted like true pears and I inquired how it was made. The pears are cooked and reduced with the juices and added to cream. Then I asked how the vanilla ice cream was so fragrant with vanilla. That Madame, is a secret!
